Heat the oil in a large saucepan and add the mustard seeds. Wait a about 30 seconds for the mustard seeds to stop popping.
Add the shredded cabbage and carrot
Add all other ingredients and stir.
Cover and leave on a low heat for 20 minutes stirring occasionally. Add a little water if required
Serve as a vegetable side dish or as meal with warm naan bread and coriander sauce on the side ( see recipe)
