Use small yellow or red lentils which cook to a creamy smooth consistency in 20 minutes to make a delicious homemade lentil soup.

Method

  • Rinse lentils thoroughly and drain. Cover with fresh water, bring to the boil and simmer for 20 mins until tender,adding a little water if required.

     

  • In a separate saucepan, heat 1tbs of oil and add all other ingredients.

  • Simmer for 5-10 mins on a low heat until tomatoes soften.

  • Pour in the cooked lentils and stir

  • Garnish with chopped coriander leaves and serve with warm naan bread.
