CHICKEN TIKKA MASALA

Method

  • In a large mixing bowl blend together all the marinade ingredients and stir in the chicken pieces . Leave overnight or for at least an hour.

  • For the tikka sauce, heat oil in a large heavy based pan and fry the onions gently until brown

  • Add all other ingredients except the yoghurt then stir and simmer on a low heat for 15 minutes, adding water if needed.

  • Spread the chicken pieces on a tray and grill under a high heat for 10-12 minutes, turning once after 5-6 minutes OR skewer the chicken and cook on a BBQ.

  • Stir the cooked chicken tikka pieces into the masala sauce

  • Stir in 3 tbsp of yoghurt and simmer for 5-10 minutes adding a little water if needed.

  • Garnish with chopped coriander and serve with warm naan bread or plain boiled basmati rice.
