Method

  • Heat the oil in a large heavy based saucepan and fry the onions for 8-10 minutes until browned

  • Add the chicken and stir to seal for 5 minutes

  • Add the ginger, garlic, salt and spices and stir. Simmer for 15-20 minutes on a medium/low heat stirring occasionally.

  • Add the chopped spinach leaves, stir and cover. Leave for 15 minutes adding water if required.

  • Garnish with chopped coriander leaves and serve with naan bread or plain boiled basmati rice.
