A super healthy chicken curry with iron boosting spinach

Heat the oil in a large heavy based saucepan and fry the onions for 8-10 minutes until browned
Add the chicken and stir to seal for 5 minutes
Add the ginger, garlic, salt and spices and stir. Simmer for 15-20 minutes on a medium/low heat stirring occasionally.
Add the chopped spinach leaves, stir and cover. Leave for 15 minutes adding water if required.
Garnish with chopped coriander leaves and serve with naan bread or plain boiled basmati rice.
