This is my warming quick and authentic chicken curry, perfect for a family meal.

Heat the oil in a large heavy based saucepan then add onions and fry for 8-10 minutes or until browned.
Add the chicken and stir to seal for 5 minutes
Add the ginger, garlic, salt and spices then stir and simmer for 15 minutes on a medium/low heat, stirring occasionally
Add the chopped tomatoes, stir, cover and leave for a further 15- 20 minutes adding a little water if required.
Garnish with coriander and serve with naan bread or plain boiled rice.
